La Tana di Paolo produces some of the best pizza crust in Naples . I’m not sure why the ingredients and taste here are inherently better, but the Quattro Formaggi and crust was no exception. Excellent Gorgonzola cheese made this a fine pizza. However if you are not a fan of breath-ruining cheese, then you will appreciate this quattro formaggi even less than an average four cheese pizza. There is excellent balance between the potent provolone and gorgonzola, and the mild pecorino and mozzarella. A thick crust is required to mute the stronger cheeses, and La Tana di Paolo’s Pizzaiolo is up to the task On a scale of one to ten I give the toppings a 6.5 and the crust a 7.5
