There is a delicious novelty to non-disc pizzas, and Zona-A has mastered the art of the unusual pizza. The bombetta, shaped like a bowl, contains a standard tomato and mozzarella marghertia pizza center and a variety of toppings stuffed into the outer rim. The pizzaiolo did an excellent job of managing to bake the crust and fold several layers into the outer rim. The bombetta contains heavy pizza char on the outer edge, which is fine as a complementary taste for a topping heavy pizza. Wood charcoal and burnt cooking flour compose ‘the char’ on the brick oven surface, and in small measures can sometimes give a sweet-sticky flavor to portions of the pizza crust. In this case, large amounts of friarielli and sausage are served well by incorporating the chewy wholesome flavor of crust and the crispy but sweet flavor of the char. The margherita center is a standard for many ‘square’ pizzas and novelty shaped pizzas, and functions as a place to dip your extra crust. On a scale of one to ten I give the toppings a 7.5 and the crust a 5.5
