Review

The Mandriana pizza at La Lucerna possesses a superior base. The provolone and ricotta base complement one another very well, one cheese provides a strong flavor and one cheese provides creaminess. The addition of cherry tomatoes rather than filleted tomatoes was another wise choice by the pizzaiolo. The cherry tomatoes add the normal sweet and fresh flavor you would expect from the vegetable, but are compact enough (compared to a mashed tomato base) to permit the diner to savor individual flavors of the cheeses and meat. I would not have thought that there could be significance in choosing cherry tomatoes over sliced San Marzano tomatoes, but it actually contributes to two separate pizza experiences.
