This may seem like an exercise in poor pizza conisseur judgement: to search for a pizza in Glasgow, Scotland- but there on Albion Street I found a brick-oven pizzeria. Curiosity got the better of me and I decided to have pizza #350 at a pizzeria named the ‘Italian Kitchen’. A restaurant name that could survive only well outside of Italy, the Italian Kitchen didn’t just do well, to my surprise they did Italian pizza justice! The Neapolitan managed restaurant was not able to boast a Neapolitan pizzaiolo, but the Polish born pizza chef did manage an excellent pulpy tomato base in his chicken and tomato pizza. The crust, the trickiest pizza aspect to replicate outside of bella Napoli, was excellent. Rich and doughy, the pizza crust here had none of the bland flatness that seems to accompany many of the non-Italian pizzas I have tried outside of Italy for the sake of comparison. On closer inspection it turned out the brick oven was actually gas-fired. Although the variation in cooking style would not permit this pizza to be Vera Neapolitan (certified by the European Union to be of Neapolitan standards), it was still well above Neapolitan average.
