Review

The uniquely folded Canoli pizza was a great variation on the normal disc pizza. Zona ‘A’ has several variations on the standard Neapolitan pizza, and earlier I tried the Rachetta pizza here. The Canoli pizza is designed exactly as you would expect a cheese canola to look, except on a much larger scale and with more ingredients.

The Canoli pizza includes two traditional Italian pizzas; sausage & friarielli, and ricotta & prosciutto. I think this pizza variation would have tasted fine with any cheese the pizzaiolo chose, but the selection of ricotta goes particularly well in this pizza. The partially covered crust ensures the ricotta remains smoking hot for longer than it would be in a normal pizza. The same can be said for the friarielli and sausage, which seem to possess a tenderness I have not had with normal sausage and friarielli pizzas. The pizzaiolo wisely omitted tomato from the pizza, as this pizza already has all the stuffing and toppings it needs. On a scale of one to ten I give the toppings a 7.5 and the crust a 7
