Depending on how you look at this pizza, it is either a swan sitting in a nest, or a viper rising to strike. The pizza name Cigno, means it is supposed to be a swan, but either way this is a good pizza. The pizza itself, swan-shaped crust not withstanding, is a ripieno (calzone) style pizza that has heavy amounts of ricotta and prosciutto for the filling with arugula and parmesan scattered on the outside. The arugula forms the Swan nest. Although the absence of a traditional pizza circle-shape may seem like more of a gimmick than a legitimate addition to a pizza menu, the stuffed ricotta and relatively fresh vegetables make this a particularly appealing pizza.
