Review

Naples has great eggplant. The semi-tropical rainfall and weather in Naples allows for an excellent growing season. Citrus fruits, eggplant and tomatoes all thrive in this environment, and the latter two fit particularly well into Neapolitan pizzas. There are few vegetables that can be as succulent as eggplant when properly sautéed. When combined with a creamy cheese, pizzeria served-eggplant almost has the same consistency of tenderized meat. For one of the best eggplant pizzas in Naples, I would recommend the Parmigiana at Acqua e Farina. I would not recommend the Gaetanina Pizza that I tried at L’isola della Pizza. Dry eggplant and low quality prosciutto made this pizza unpalatable after about the second slice. The eggplant cuts were thick, but not tender, so the pizza tasted more like bad bread than a pizza. On a scale of one to ten I give the toppings a 3 and the passable crust a 4
