Review

Cipster is another pizzeria in Pozzuoli that sits along Solfatara. On windless mornings you can smell for yourself why this road and the area are named for the volcanic sulfur vents of Pozzuoli. Fortunately by the time you would plan on eating pizza in the evening, Naples’ own urban smells have replaced that of the sulfur clouds. Of the pizzerias I have tried on Solfatara, Cipster sits squarely at the bottom of my list. The Saracena pizza had rubbery ingredients with excessive oil on the eggplant. A good crust was not enough to save this pizza. Instead of using prosciutto, Cipster’s pizzaiolo used a thicker saltier slice of ham, that lacked the flavor and the tenderness of a finer cut of ham. The pork and eggplant on this pizza were certainly soft, but not tender. Additionally the sliced eggplant had probably sat in the chef’s ingredient prep bowl for too long and gave an oily taste to the pizza that fresh eggplant would not. On a scale of one to ten I give the toppings a 2 and the crust a 5.5
