D.O.C. (Denominazione Di Origine Controllata E Garantita) pizzas are predictably good pizzas, with industry regulated ingredients. The D.O.C. also represents the best of traditional Neapolitan ingredients with tomatoes certified as Vesuvio tomatoes (grown on the slopes of Mount Vesuvius) and mozzarella produced from the milk of water buffaloes. This pizza will almost always be above average in Naples. If you have tried a D.O.C. before or are not nostalgic for Naples, then I would recommend trying something a bit more inventive though. Nudibranko does not have a pizza named after the restaurant (nor for that matter do I know what their pizzeria name means…), so this pizza was a safe bet.
