D.O.C. stands for Denominazione Di Origine Controllata E Garantita and means that whenever this label ‘DOC’ has been placed on a cheese, wine, or a served dish (in this case the pizza) the contents have passed the standards of the Italian regulatory body that oversees food and wine production. In the case of a pizza, DOC implies that the ingredients meet the highest Margherita Pizza content standards and exclusively use buffalo mozzarella, tomatoes grown on the slopes of Mount Vesuvius, basil, and extra-virgin olive oil. DOC also supposedly establishes how long the pizza is cooked- exactly two minutes at a set temperature.
This was an excellent pizza, with rich mozzarella and delicious crust. The DOC pizza, ordered in Italian as just ‘Doc’ with a hard ‘O’, is only about two euros more than its standard Margherita counterpart, and is definitely worth it due to the higher quality mozzarella. My outdoor seating made me prey to the numerous mosquito swarms that converge on restaurants during July, but I still really enjoyed the pizza. Despite the guaranteed quality in the pizza ingredients, the crust was the best aspect of the pizza. Sometimes the olive oil or fatty nature of the mozzarella can leave your pizza a bit greasy or oily (I could not tell the difference here) but it helps to have especially thick crust to sop up the liquid.
