Il Rudere has so far only produced good pizza for me, so for pizza 150 I decided to go with something known to be good. Unlike many of Il Rudere’s competitors, it has no sea front view to boast of, but that means it caters less to tourists and more to making uncompromising crust and good toppings for most of their Italian customers. The pizza I ordered, Totto and Peppino , was not their best, but was still very good. The pizza appears almost entirely green, from all the arugula spread on top of the pizza. Beneath that, is a layer of thin prosciutto and then a base of mozzarella. Nothing complicated, and all the three toppings are fresh. The white mozzarella has very little flavor leaving you to taste mostly arugula and the prosciutto, which was slightly stringy from some excess fat. On a scale of one to ten I give the toppings a 6.5 and the crust a 6.
